Pumpkin Chocolate Chip Muffins

I’m a big fan of muffins, chocolate, and pumpkin. So naturally, these pumpkin chocolate chip muffins were created. They are incredibly easy to make, minimal ingredients, and turn out perfect every time. Trust me, you will not be disappointed with these!

Here’s how you make these Pumpkin Chocolate Chip Muffins:

Dry Ingredients:

1 1/2 c. all purpose flour

1 1/2 c. Oat Flour

2 tsp. Pumpkin pie spice

2 tsp. Cinnamon

1 1/2 tsp. Baking soda

3/4 tsp. sea salt

Wet ingredients:

1 c. almond milk (@almondcow)

1 c. Pumpkin purée

1/4 c. Coconut sugar

1/4 c. (Or less) honey or maple syrup

3 tbsp. Coconut oil (melted)

1 tsp vanilla extract

Directions: Mix wet ingredients into dry ingredients, add chocolate chips to the batter & top (if desired), sprinkle with a little coconut sugar & bake at 375 for 18 minutes!
