Chickpea Peanut Butter Cookie Dough (Vegan, Gluten Free)

When I was a kid, I was never allowed to eat any of the cookie dough because it would make me sick, so obviously I needed to get in on the cookie dough obsession with this Chickpea Peanut Butter Cookie Dough! This amazing tasting cookie dough is made with simple ingredients, packed with protein, and ready in less than 10 minutes, it’s bound to become one of your favorites too!

Chickpea Peanut Butter Cookie Dough

Ingredients:

1 can chickpeas
2 tbsp maple syrup 
1/3 c. peanut butter 
1 tsp vanilla 
1/4 c. chocolate chips (save out of food processor until end)

Pinch of sea salt

Directions:

  1. Strain and rinse the can of chickpeas. For smoother consistency cookie dough, remove the skin of the chickpea)

  2. Combine all ingredients (except chocolate chips) into a food processor

  3. Blend until smooth

  4. Add in chocolate chips

  5. Place into sealable container and store in fridge
