Gathered Nutrition Blender Cashew Curry

This is a recipe I will never stop making. If you have yet to try this recipe (or truly any from Mia’s site) you’re truly missing out. I know that “curry” is often more of a fall/winter thing but I love this curry because it feels more like a vegetable sauce that packs so much flavor. I seriously cannot get enough of it. I have some in my fridge right now and love that when you make it, whatever you don’t use lasts in the fridge for about a week. I usually put this curry sauce over tofu, chickpeas, any and all veggies but have been told it’s amazing on top of chicken as well! Save this one and give it a go!

The First Mess Sticky Ginger Tempeh

A full-on comfort food to me. When I first moved into my apartment, I bought a lot of tempeh and realized that I didn’t fully know the best ways to cook it and it’s been just chilling in my fridge ever since. I found this recipe and loved how easy the recipe is to follow and how well it saves for leftovers. If you are new to tempeh - start here! The ginger and garlic really pack the punch here so I always add more + the coconut rice she shares is UNREAL.

Shut The Kale Up Flautas

Let’s just say once I discovered this recipe, I made them EVERY. SINGLE. DAY. afterwards. I’m not even joking, these are a crave worthy meal and I just can’t get enough of them. Shut The Kale Up’s recipe calls for chicken but I simply substitute with refried black beans but follow all of her directions. Simple, delicious, and satisfying meal. I won’t say I am sorry once you become absolutely addicted to these!

Cast Iron Skillet Pizza

I made up this fun new way to eat pizza sometime last month and I haven’t been able to stop making it since - this to me is the best way to make pizza at home and it’s so easy! A dreamy dinner that’s done in less than 20 minutes, what more could you ask for?

Ambitious Kitchen Brown Butter Cookies

THE BEST COOKIES, period. Honestly, I’ve never had a cookie that is perfectly crispy on the outside while still soft and pillowy on the inside… Then I made these and now I can’t say that statement is true. The brown butter in these cookies is just unreal. I can’t get enough of these + love making a batch, baking up a few and then freezing the remainder of the dough for whenever I feel like having a cookie!

Vegetarian Pad Thai

Okay, this is probably the #1 repeat on this entire list. Once you make this recipe, you’ll wonder why you ever need to go out for Thai food again! Make this one, you won’t be sorry!!
